Our Beef , Veal & Pork all
come from “Rheintal” this farm is located near Trois – Rivieres.
These animals do not receive
any antibiotics or growth hormones and are fed only organic feed
(grain & grass in the summer) ,no animal
byproducts of any sort are incorporated in organic feed at any
time. Any animal showing signs of disease must be treated
homoeopathically or removed from the herd.

All cuts
are vacuum packed. They can be kept frozen for several months
without any effect on quality.

All cuts
available upon request. Take details including cut, name, phone #
and date (in purple box).

We receive
our pork fresh and freeze it within 5 days.
The best method to defrost all vacuum packed
meat including fish is to place it in the fridge one day in
advance of cooking or in a bowl of cold water for about an
hour.
Do not remove from package until defrosted.
This
is an outstanding product and tastes the way pork should. If
you’ve never tried organic pork from “Rheintal” before you’re in
for a surprise.
Cuts:
Pork chops and Papillon ( boneless) ¾” thick.
Pork cubes for stewing and brochettes.
Minced pork
Pork tenderloin ( the filet mignon) beyond
compare. Usually must be reserved.

Shoulder & butt roasts
Scaloppini - thin slices for schnitzel…(better
and cheaper than veal scaloppini)
Deli cuts:
all our smoked products are nitrite free (used
as preservative potentially cancer causing).

Bacon –
comes in app. 1lb. vacuum pack bag, can be kept in the fridge 3-4
days.

Ham –
sliced, black forest/ smoked ham. Also available whole (unsliced).
Sausages:
