Our Beef , Veal & Pork all come from “Rheintal” this farm is located near Trois – Rivieres.

 

These animals do not receive any antibiotics or growth hormones and are fed only organic feed (grain & grass in the summer) ,no animal by-products of any sort are incorporated in organic feed at any time. Any animal showing signs of disease must be treated homoeopathically or removed from the herd.

 ·        The beef is aged 21 days, making it extremely tender and flavourful.

·        All cuts are approximately 1” thick, filet mignon is cut 2” thick.

·        All cuts are vacuum packed. They can be kept frozen for several months without any effect on quality.

·        All cuts available upon request.

·        We receive our beef fresh and freeze it within 5 days.

 

 

The beef cuts:

 

·        The coup francaise and tournedos are tenderised and very affordable.

·        Our minced meat is 80% - 85% lean. The extra lean is over 90%.

·        Sirloin & sirloin tip are very similar cuts, they have excellent texture and flavour.

·        Cubes are good for slow cooking and stewing.

·        Brochette cubes are for B.B.Qing and are an excellent cut.

·        T-bone & Rib steaks are well marbled with outstanding flavour and tenderness.

  

The best method to defrost all vacuum packed meat including fish is to place it in the fridge one day in advance of cooking or in a bowl of cold water for about an hour.

Do not remove from package until defrosted.
